If you've been reading my blog for any amount of time, then you know that I have one picky 2 year old. It's ridiculously hard to get him to eat very much-especially anything healthy. We supplement a lot with green smoothies, but I'm always on the lookout for recipes that will get some goodness into his tiny little body.
I hit the jackpot with this one.
It's incredibly simple.
1 banana (sliced)
1 cup vanilla yogurt (greek is prefered)
1 tbs PB2 (powered peanut butter. It's literally peanut butter without the oils)
1/2 tsp sprinkles (totally not healthy, but this little amount is not that big of a deal. Trust me.)
Mix yogurt and PB2 together until smooth. Toss in bananas and top with sprinkles.
BAM! Total protein goodness. When I gave this to my son he yelled, "Mommy! It's so yummy!" I was pretty happy. No, he's not eating cooked kale, but this is a start. I'll celebrate the small victories as if I've won the war.
