Am I the only one who thinks Daylight Savings Time REALLY SUCKS??? I have not been able to get on a good schedule since we lost that hour. I've been waking up close to 10am!
This is not good. It makes me not be able to fall asleep until midnight or later, then I typically wake up a zillion times in the night and its just not cool. I don't like sleeping in late at all. I feel lazy and that I've wasted my entire day. The hubs says I should enjoy it since it won't be happening for much longer! He always finds a silver lining...
So muffins! Yeah...about those! I made these-again-in hopes that Mr. Picky himself wouldn't be able to resist. I was wrong. Moosey gobbled them up, and Little Man wouldn't touch them. Moosey has eaten three so far and keeps saying how, "duuuh-licious" they are, so I figure they're good enough to share with you all!
My inspiration came from My Dream Sample Box Inc.'s version of Oatmeal Banana Cupcakes. She has chocolate chips or blueberries in hers, so check it out!
In my version, I was trying to sneak in some goodness with the addition of beet powder. Now don't freak out. This isn't an odd ingredient and you can find it on Amazon pretty cheap! One teaspoon of this stuff equals one beet! Pretty cool eh? It's also what gives these muffins a pink hue too. You can use beet powder for quite a lot. In smoothies, sauces, and even tinting icing for a natural "food coloring"!
Here are the basic ingredients:
3 smooshed bananas (super ripe is best!)
1 cup vanilla almond milk (unsweetened)
3 cups old fashioned oats
2 teaspoons vanilla extract
1/3 dried cranberries
1 tablespoon baking powder
2 teaspoons beet powder
Preheat oven to 375 degrees.
Mix all ingredients together until evenly incorporated.
Fill greased cupcake pan 1/3 full.
Bake until centers are fully cooked.
Cool and eat!
Makes between 12-15 muffins
Took less than an hour start to finish before lil miss Moosey was chomping away at these last night. She's had two for breakfast this morning. I planned on freezing these, but I think she'll eat them long before they need to go in the freezer!
