Chunky Lasagna Stew



I've had this recipe under wraps for a bit. I think I was supposed to post this about 2 weeks ago! Sorry, I've seriously been holding out on you guys! This 'stew' is so darn good, you won't want to share it with anyone!

I looked up a few lasagna soup recipes up on Pinterest (this seems to be the routine) but many of them-I didn't have the ingredients for. So, it was time to get a bit creative.

I was kind of nervous how it would turn out, but MAN-O-MAN, it was awesome! The hubs and I actually devoured three bowls of this stuff! Of course, this was the only meal I had that day, but the baby seemed to enjoy it and allowed me to enjoy it too!

Here's the run down:

Lasagna Stew

Ingredients:

1 pound ground turkey
1 box Campanelle pasta (you can honestly use whatever pasta you want. I just like this fancy stuff!)
1 can tomato paste
6 cups chicken broth
1 can diced tomatoes
2 tbs coconut oil
2 tbs minced garlic
3 tbs Worcestershire sauce
2 tbs Herbs de Provence (or any herb blend you enjoy)
1 tsp chili flakes
1 cup Ricotta cheese
1/2 cup Parmesan or Romano cheese

Directions:

1. Start pot of bowling water for pasta. Once cooked, set aside until meat in browned.
2. Begin browning ground turkey in large pot with oil, garlic, and Worcestershire sauce. As the meat begins to brown and absorbs the liquid, add small amounts of chicken broth to prevent drying out.
3. Once meat is completely browned, add remaining chicken stock, tomato paste, diced tomatoes, herbs, chili flakes, and pasta. Cook on medium heat for a few minutes until every is incorporated.
4. Mix Ricotta and Parmesan cheese together and top the hot 'stew'. Enjoy!
