An Oven Pancake Revisited

Thought I'd share an older post with you guys! This recipe was a HUGE hit at our house! I haven't made it in awhile, but I think I might do this soon!

I love Pinterest. I find the most yummy recipes on there! (You can follow me, here) This recipe was no exception! It was easy, fast, and super yummy! It's called a Hootenanny! Haha. Love that name. But yes, this is a really easy oven pancake. The recipe is located here. I know, I know. It's a link to the pin on Pinterest, but I cannot locate the original post! So, if you know who did this first, I would LOVE to give them credit!

Here is a pick half way through the cooking process. It's not finished, but because I used a smaller pan (8x11 instead or 9x13) the sides were REALLY close to touching the burners! It's amazing how much it "grows" during the baking process. Now, although this is called a "pancake", because of the amount of eggs involved, it has more of a french toast texture.

For my husband and daughter, I drizzled honey and powdered sugar over a piece! For me? Maple syrup! I did add flax seed meal to the batter, and will probably add cinnamon next time.

Up close and personal. You can see how fluffy this thing is! From start to finish, this takes about 30-35 mins.   Twenty-five of those minutes is just baking time!

Definitely try this out! It's a great Sunday morning meal, as it is so easy and simple to make! You can do a dozen different varities. You could add cocoa powder, and drizzle with strawberry jam. You could add pumpkin spice and make a maple glaze. It goes on, and on, and on, and on!
