Semi-Homemade Broccoli Casserole



Recipe time!!!


I posted this on Instagram last week. If you're not following me, my s/n is purple_kale28, my life is so exciting that I must post artsy looking pictures of it all!

This day was a day where I was feeling rather creative. I pulled a bunch of stuff out of my fridge and pantry and whipped it all together.

This is SEMI-homemade, so that means there are some pre-packaged stuff. 
Oh you thought I was perfect? Sorry to disappoint.

Anyways, here are the ingredients-

Semi-Homemade Broccoli Casserole 

-1 bag of Wacky Mac or a pasta of your choice
-3 eggs
-1 can Recipe Starters (I used the Basil Parmesan) 
-1/2 cup chopped baby spinach
-1/2 cup chopped broccoli
-1/2 cup chopped carrots
1/2 cup mozzarella cheese
-1/4 cup Nutritional Yeats (optional)
-1/4 cup Panko breadcrumbs
-1/4 cup Parmesan cheese
-2tbs garlic powder
-2tbs minced onion
-salt and pepper to taste


Directions:

-Cook the pasta to ALMOST aldente. 
-Preheat oven to 350 degrees
-While the pasta is cooking, mix everything but the Parmesan and breadcrumbs together. 
-Once the pasta is cooked toss with the cheesy mixture.
-Pour pasta into a greased casserole dish
-Top casserole dish with Parm and breadcrumbs.
-Cook for 45 mins. If the top begins to brown too quickly, top with foil


This meal was specifically for my husband to have three meals to take to work. He LOVED it! It was really easy and quick to whip together. Next time, I will probably add some red onion and squash to it!
