I have made this yummy concoction twice in the past two weeks. The hubs really REALLY likes it, so I decided to share it with you lovelies.
4 large russet potatoes. (Cubed, washed, cooked, and cooled)
1/2 cup sour cream or plain greek yogurt (both ways are really good)
1/2 mayonnaise (I used Vegannaise)
1/2 shredded cheese of your choice (I use sharp cheddar)
1/2 cup cooked and chopped bacon
1/4 cup diced chives
1tbs onion flakes
2tbs garlic powder
1tbs apple cider vinegar
1tbs sugar (I used Truvia)
salt and pepper to taste
Mix everything except chives and bacon together in a bowl and toss in the potatoes until everything is coated evenly. If your "sauce" isn't creamy enough, then go ahead and add a bit more sour cream.
After everything is coated, then add the bacon and chives and toss lightly.
You can even warm this up in the microwave if you want (my hubs prefers it this way) or put in the fridge to chill like traditional potato salad!
Now, here was my shake from the other day!
8oz vanilla soy milk
2 scoops Vi-Shake
1/4 cup frozen cranberries
1/4 frozen strawberries
4 frozen peach slices
handful of fresh blackberries
It came out the consistency of frozen yogurt! I LOVE it!!!
